Line believes in the method of anarchy, approaching products and ingredients in a respectful and subversive way.

The starting point:

Line embarked on its journey when Vasilis Kyritsis and Nikos Bakoulis, co-founders of the internationally acclaimed The Clumsies Bar and award-winning professionals in the international bartending scene, joined forces with Dimitris Dafopoulos, co-founder of the highly successful Three Cents Artisanal Beverages. The three of them follow the line of anarchy and share a common sustainability vision -extending to materials as well as people-, synergy and fermentation, both literal and metaphorical.

The journey:

Line draws its inspiration from the dynamic and natural journey of fermentation, the seasonality of produce, the concept of sustainability and the synergy with small Greek producers, in order to set out on a journey with hybrid fermentation products as stations along the way.
Putting emphasis on unexpected ingredients and their unorthodox handling, Line makes its own fruit “wines”, beer and artisan bread. Ingredients are swapped between recipes, producing an offbeat list of classic cocktails with a twist, by
employing wine by-products, such as dry and sweet vermouths, along the lines of the zero-waste movement.
Line’s sophisticated menu seeks to renew the old comfort bar food, and staying true to having a high value on experimentation approaches familiar favourites in an unconventional way. In the context of sustainability and zero-waste philosophy, Line’s kitchen channels its excess materials to other Line recipes, having already put by-products of fermentation to good use.

Sustainability:

Line is located in an inspiring former industrial space designed to minimise its environmental footprint, while it is its future aspiration to become fully energy independent.
